Flaming Mai Tai


FLAMING MAI TAI

1 oz Dark Rum

1 oz Light Rum

0.75 oz Fresh Lime Juice

0.5 oz Pierre Ferrand Dry Curacao Orange

0.5 oz Orgeat

2 Dashes Bittercube’s Jamaican No.1 Bitters

Combine all into a cocktail shaker. Add ice and shake vigorously to chill. Strain over fresh pebbled or crushed ice in a double-rocks glass or low tiki mug. Garnish with a *flaming lime shell.

*Flaming Lime Shell

Use a knife, spoon, or a clamshell juicer (and place the lime opposite side up) to remove/hollow out the flesh from a halved lime. In the now, bowl shaped lime, add a sugar cube soaked with 151-proof rum. Place the shell on pebble ice/crushed ice for stability. And top with another small splash of high-proof rum. Light with a long match then sprinkle ground cinnamon over the flame for the dramatic sparks.
